Since the weather has grown so cold, I thought this week I would do a recipe to warm you up! I found this recipe for chili on this great app on my iPhone. This can be made on the stove top or in a slow cooker.
"Its Chili by George!" by George Couch
Ingredients:
2 pounds lean ground beef
1 (46 fluid oz) can tomato juice
1 (29 oz) can tomato sauce
1 (15 oz) can kidney beans, drained and rinsed
1 (15 oz) can pinto beans, drained and rinsed
1 1/2 c. chopped onion (I chose yellow)
1/4 c. chopped green bell pepper (I used half of a pepper)
1/8 tsp. ground cayenne pepper
1/2 tsp. white sugar
1/2 tsp. dried oregano
1/2 tsp. ground black pepper
1 tsp. salt
1 1/2 tsp. ground cumin
1/4 cup chili powder
Directions:
1. Place ground beef in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and crumble.
2. In a large pot over high heat combine the ground beef, tomato juice, tomato sauce, kidney beans, pinto beans, onions, bell pepper, cayenne pepper, sugar, oregano, ground black pepper, salt, cumin, and chili powder. Bring to a boil, then reduce heat to low. Simmer for 1 1/2 hours. (Note: If using a slow cooker, set on low, add ingredients, and cook for 8-10 hours).
3. Spoon into a bowl. Serve with cheese and sour cream (or greek yogurt).
Jim and I love chili! We both loved this recipe. Jim had lots of leftovers and ate chili for football Sundays for 2 weeks! We had ours with cornbread the first night, then tortilla chips another night. The seasoning was perfect. Not too spicy for me and just spicy enough for Jim. The only suggestion I have is to add more beans. I would do two cans of each bean to give an equal beef/bean ratio. This would be perfect to throw in the slow cooker and cook all day then have a delicious meal when you get home!
