Tasty Tuesday

I love Chicken! But, I get easily bored with my food, so always trying to find new ways to cook  (& serve) chicken. Here is a new recipe that I found that combines chicken with Philadelphia Cooking Creme. We loved it and have added it to our arsenal :-)

Teriyaki Chicken Casserole

Ingredients:
1 pound of boneless, skinless chicken breasts, cut into bite-size pieces
2 stalks of celery, thinly sliced ( I omitted because I despise celery)
1/2 cup chopped yellow onion
1/2 cup chopped red peppers
1/4 cup teriyaki sauce, divided
1 (10 ounce) tub Philadelphia Original Cooking Creme
2 cups hot cooked long-grain white rice
1 (8 ounce) can pineapple tidbits, well drained
1/2 cup chow mein noodles
3 green onions, thinly sliced

 Direction:
1. Heat oven to 375 degrees F.
2. Cook and stir chicken, celery, yellow onions, peppers, and 2 Tbsp. teriyaki sauce in large nonstick skillet on medium heat 5 to 6 minutes or until chicken is evenly browned and vegetables are crisp-tender.
3. Stir in cooking creme, remaining teriyaki sauce, rice and pineapple.
4. Spoon into a  2-qt. casserole dish sprayed with cooking spray.
5. Bake 15 to 20 minutes or until heated through. Then top with noodles and and green onions!

The best part about this dish is that it says its only 291 calories per serving and it is delicious!
